I made salad chicken this time. It is juicy, tender, and delicious. It can be seasoned with whatever seasonings you like, so I’m sure you can enjoy all sorts of flavor variations!

I’ve made this recipe so many times because it’s very easy to make, and it can be kept in the fridge for a couple of days!

Salad chicken is a menu item that can be “auto-cooked” in Hot-Cook, released after September 2020.

Automatic cooking is convenient because, unlike “manual cooking,” it can be made with just a single touch of a category or menu number without setting time or temperature.

We have two Hot-Cooks at home, an old model and a new model that we have used for many years. So we have been trying out various recipes, such as this “salad chicken,” that are only introduced in the new Hot-Cook model, to see if they can be made in the old model as well.

It’s pretty fun to try and cook differently and compare the finished dishes made with the two models.

Accordingly, I made “Salad Chicken” with both the new and old models! As it turned out, the chicken cooked in both models was delicious!

I’ve included a recipe for the old model at the end of this article for your reference.

Hot-Cook Recipe [Salad Chicken] One Point Advice

  • The best way to make the chicken tasty is to season it well and evenly dust it with seasoning on the surface.

Hot-Cook Recipe [Salad Chicken] Ingredients: 300g

  • Chicken breast: 1 (300 g)
  • Salt: 1/2 teaspoon (3g)
  • Herb mixture: 1/2 teaspoon
  • Olive oil: 1 tablespoon

◆Zipper storage bag: 1

*Up to double the amount (2 bags) can be done automatically.
*For salad chicken, the amount of salt is approximately 1% of the meat weight.

How to make salad chicken in Hot-Cook [new model]

STEP 1:Prepare ingredients
  • Prepare salt and herb mix.
  • In a zipper storage bag, mix salt, herb mix, and olive oil in that order.
  • Remove the skin from the chicken breasts and pierce the surface with a fork.
  • Put the chicken into the storage bag, mix well, remove the air, and close the bag tightly with the zipper.

STEP 2:Put them in the Hot-Cook inner pot
  • Place the chicken in the storage bag in the inner pot.
  • Next, add water up to the “water level max” line.
  • Place the “steaming tray” that comes with the Hot-Cook.

Select a menu => Search by category => Fermentation and low-temperature cooking => Salad Chicken => Start cooking => Start

STEP 4:Complete!

When you hear the finishing chime, open the lid, remove the storage bag, place it on a plate or other surface, and let it rest at room temperature for 1 hour.

Remove from the bag and cut into pieces.

How to make salad chicken in Hot-Cook [old model]

When making salad chicken in the old model Hot-Cook, use the “Manual cooking => Fermentation and Low-Temperature Cooking” menu. At this time, there are two essential points.

Point 1: Temperature and cooking time settings

For automatic cooking of salad chicken with newer models, the low-temperature cooking setting is automatically set to 71°C and the cooking time to 70 minutes.

However, when using the old models, the temperature and time settings for fermentation and low-temperature cooking cannot be set to 71 degC and 70 minutes. The next setting for the old model after 70 degC is 75 degC. Also, next time setting after one-hour is two hours.

After many experiments, I found that “heat” is important in low-temperature cooking to kill bacteria, so I played it safe and cooked it at 75 degC for 60 minutes.

As a result, the finished meat got a little more heated than the salad chicken cooked in the new model, but it still turned out tender and delicious to eat.

Point 2: Use a “steaming tray” or “steaming board” & plate

“Steaming tray” that comes with the new Hot-Cook models is used for low-temperature cooking of salad chicken.

You can purchase it from the Sharp online store, even if you are using the old models. The same steaming tray can be used for those who use the stainless steel inner pots of older models.

But even if you do not have a steaming tray, it is not a problem. If you do not have a steaming tray, you can use a “steaming plate” that came with the older models.

However, if you use only the steaming board, the meat in the storage bag will float, so use a regular plate of the size that fits in the inner pot as a weight.

For a 1.6L pot, the plate should be 18 cm in diameter, and for a 2.4L pot, it should be 20 cm in diameter.

  • The best way to make the chicken tasty is to thoroughly coat it with seasonings and spread them evenly over the chicken’s surface.
  • Cook at 75 degC for 60 minutes.
  • If you have a steaming tray, please use it.
  • But if you do not have the tray, use a steaming board and plate as weight.

  • Chicken breast: 1 (300 g)
  • Salt: 1/2 teaspoon (3g)
  • Herb mixture: 1/2 teaspoon
  • Olive oil: 1 tablespoon

  • If you have a “steaming tray,” insert the tray.

  • If you do not have a steaming tray, put in a steaming board and place a plate on top to weigh it down. If it is a little unstable, put two plates.

Salad chicken is delicious, but it is also a wallet-friendly and money-saving dish, as chicken meat can be purchased relatively at a lower cost.

Salad chicken is famous for its high protein and low-calorie content, and many people eat them as diet food, so we can often find them in supermarkets and convenience stores.

Commercially available salad chicken is sold at a nearby supermarket for around 200 yen for 120g.

When made with Hot-Cook, the cost of ingredients is about 250 Japanese yen for 300g, which is a bargain. Almost half the price!
